Cutting Board
We bought some Japanese knives and needed a board compatible with those Japanese knives. This cutting board is AMAZING! A wonderful light cutting board for maintaining our knife edge and for harder steels to avoid chipping. I love the size and thickness to this and it smells like pure Hinoki Cypress. The large board is about the same size as the plastic board we used so it is perfect size to replace our old plastic one for everyday use. Your miles may vary so I suggest that you check the measurement that the manufacture provides. Overall we are very happy with the board.

overpriced pretty slab of SOFT wood
I congratulate Yoshihiro for making a pretty and aromatic slab of fragile wood.I was looking for a valuable cutting board that will last. However, this wood is as soft as knotty pine. This will protect your expensive knife edges as you carve through the cypress board like whittle. It’s too expensive for how fragile it is. See photo of the Janka Hardness scale. And if you love knives, see their beautiful collection of real forged cutlery. Their are some amazing knives made by this company; they are like mini samurai swords.

Great chopping board, a little smaller than expected.
The board is lightway, build very sturdy and high quality, but the shape is a little smaller than I expected.

Good investment for high end Japanese knives
Excellent cutting board for use with knives that have hard, brittle edges. The picture shows the board after treating with one coat of oil. followed by 2 coats of board conditioner. The resulting traditional cherry wood finish looks much better than the factory balsa wood finish. I chopped enough vegetables for 6 quarts of vegetable soup, and the board had knife marks all over the surface. The next day all the marks were gone! Very happy so far. The Santoku knive, pictured, is from Yaxell.

A very nice quality board
Some of the finest kitchen accessories I have ever owned. The cutting board can be expensive, but they are worth far more than they cost as it saves your knife's edge and smell and look amazing.I absolutely love my Hinoki cutting board and if you don't have a soft cutting board for your thinner Japanese knives, you should get some immediately. If you love cooking, I highly recommend this board.

Nice look & feel, weak
I got it a couple weeks ago to simplify and extend life for my Shun knifes and finally found time to unpack it. The 14" long x 9.75" wide x 0.6" thick board is made of hinoki tree (Japanese cypress), edge grain, plus brown walnut sides (seamless, like laser-cut, connection between the two types of wood). The board looks aesthetically pleasing, especially upon application of mineral oil (took 4-5 oiling rounds). Craftsmanship is good in general, however "easy to stand design" with a rotating latch let me down - there is a crack caused by the overtightened screw. I haven't used it for cutting yet but no doubts hinoki wood will serve well. I like it but will likely be returning because a crack on a "Proudly made in Japan" item @ $90 is inexcusable - and hence for now only 3 stars instead of 5. A long n deep crack 10 days after we received the board.
The board arrived on 13 Jul and 10 days later, a long deep crack appeared at the part where the support is. I am extremely disappointed.
